ofada stew with rice

Ofada Stew or Designer Stew with Rice – 7th Day of Christmas


For people that live in Surulere in Lagos, you would know the popular joint close to Akerele called Bank Olemoh. The Rice and stew served at the local restaurant (Buka) there is popularly called Bank Olemoh Rice or Designer rice or Designer stew and rice. I have also heard it is popularly called Ofada Stew and sometimes people mistake it for Ayamatse. The concept of designer stew is not the what we think in terms of name brands but the idea is to have multiple proteins in one pot of stew. Your proteins could range from beef to egg to tripe(shaki) to cow skin (pomo) to chicken etc. This stew is a little complex but indeed very interesting to make and it was the first dish Afrolems started with. Hope you find it easy to make. Seasons feedings….enjoy!
Ingredients
Beef
Shaki (cow or goat tripe)
Pomo (Cow skin)
Cow Intestine(optional)
Chicken
or whatever other protein you would like to add
8 tomatoes ( if you can get 2 of the pieces of tomato that are almost bad, that helps) – blended
3 scotch bonnet peppers- blended
1 red bell pepper- blended
3 cooking spoons of palm oil
1 bulb of onion- chopped
1 tablespoon of dawa dawa (iru) or Locust beans
2 tablespoons of salt
1 table spoon of dry pepper
4 cubes of Maggi
Method
*Wash, season and boil all protein.
*Fry the protein separately till brown and somewhat crispy
*Heat up 2 cooking spoons of palm oil till it turns clear. This is what is called bleaching of the oil. To prevent your smoke alarm from going off, continually take it off the burner to cool and re-heat till its clear.
*Fry the Iru (locust beans) for 2 minutes and take out of the oil.
* Toss in the onion and blended tomatoes and peppers and fry it dry.
*Pour in the seasoning and stock from the boiled protein if any.
*In a separate pot, bleach the rest of the palm oil.
* Pour in the fried protein into the pot of stew
*Once the other oil is bleached, pour into the pot of stew. (Be careful not to let it splash on your face so pour it with the cover of the pot protecting your face)
* stir in and allow to simmer for about 3 minutes.
Serve with White rice and plantain. designer rice

I cannot believe this blog has been up and running for as long as it has been and doesn’t have the recipe for party jollof rice. Please forgive me dear Blog followers. Jollof rice is a dish that every nigerian chef seems to make differently. I prefer my jollof rice very spicy and tasting like party jollof rice. For the non-nigerian followers of this blog, Jollof rice is one of the favorites of Nigerians at parties, in their homes, in nigerian restaurants. You can also learn how to make it yourself now. Hope you enjoy my recipe for Party Jollof Rice.
Ingredients
2 Bay leaves
2 Cups of Rice
3 Cups of water
1 Clove of garlic
3 Cubes of Maggi
A pinch of Thyme
2 Teaspoons of Salt
1 Small bulb of Onion
3 Scotch Bonnet Peppers
1 Teaspoon of dry pepper
1 Teaspoon of curry powder
1 Small can of Tomato puree
7 Medium sized Roma Tomatoes
2 Cooking spoons of Vegetable Oil

Method
*Wash rice by rubbing the rice between your palms in a bowl of water and draining the water till clear.
Blend tomatoes, pepper and garlic and bring to boil till the excess water dries up.
Chop Onions
Heat up vegetable oil and pour in chopped onions and fry. Pour in the can of tomato puree and fry.
Pour in blended tomato and pepper mix into the pot and stir in. Pour in salt, dry pepper, curry, thyme and maggi cubes.
Allow it to simmer on low heat for 3 minutes.
Reduce the heat to the lowest level and pour in the washed rice. Pour in the water and stir and leave on low heat for 20 minutes or till the rice is soft.
Tip: To get the party rice flavor, increase the heat on the rice and burn the bottom of the pot with the pot covered and stir the rice after 3 minutes of burning.
Stir the rice and serve with any protein of your choice.

Scotch Egg Recipe

A Scotch egg is also known as egg devil and it is made up of hard boiled egg that is wrapped around in sausage meat and coated with Flour or breadcrumbs and then deep fried. Did you know that scotch eggs are originally an English dish and this recipe was created by Fortnum & Mason of Piccadilly in 1738?
Ingredients
300g Sausage Meat
5 Hard-boiled Eggstype of sausage meat for scotch egg
1 egg for coating (not boiled)
1 cube of Maggi
2 cups of All purpose Flour
2 cups of Dried Breadcrumbs
Oil for deep frying
½ teaspoon of Salt
A pinch of dry Pepper
3 Cups of water

Method:
Season sausage with Maggi, salt and pepper.
Boil eggs with water for about 10-15 minutes.
Break and whisk the other egg for coating
Peel the hard boiled egg and mold with the sausage meat.
Dip in whisked egg then bread crumbs and finally in the bowl of flour.
Deep Fry in hot oil till brown and crisp on medium heat and allow enough time for sausage meat to cook through.
This should take approximately 3-4 minutes of deep frying.
Serve with a sweet Italian dressing.

How to prepare home made goat pepper soup at home

Asun (Spicy Goat Meat) this xmas

Chilli alert!!! If you do not like spicy food, this dish is a no-go area for you. However, if you are like me and your taste buds are dead to pepper then please proceed. I remember Christmas of 2011, I had friends over as my mum had cooked up a storm. My friends heaped tons and tons of food on their plate till they got to the Asun then they knew “power pass power!”( beyond their control). Asun is an amazingly tasty dish and can be served as an appetizer at parties. However, I believe that once you start with Asun, with the amount of water you drink, you may not have space for the main dish. Enjoy the Afrolems version of this dish.
Ingredients
1 Pound of Goat Meat
5 Blended Scotch Bonnet Peppers (Preferential- you can use more or less)
2 cubes of Maggi
2 teaspoons of salt
1.5 cooking spoon of vegetable oil
1 bulb of Onion
1 clove of Garlic
Method
Marinate Goat meat overnight with Salt, garlic, blended scotch bonnet peppers and 1 cube of maggi
Heat up oven to 380F if you do not have a grill. Grease a pan with vegetable oil and place the goat meat from the night before in the pan and place in oven for 30 minutes.
Check to see if goat meat is soft. Typically goat meat without skin should be about ready to take out at this point. However, goat meat with skin may require more oven cooking time.
Cut Onion into thin slices and heat up the rest of the vegetable oil in a pan.
Toss in the onions and fry for about 45 seconds, toss in your spiced goat meat into the pan and stir fry, add 1 more cube of maggi and salt if necessary.
Allow to fry dry and serve with Boiled plantains, roasted plantains or as a stand alone appetizer

How to make SUYA pepper spice during xmas at home

How to Make Suya Pepper Spice

“Abeg Mallam give me suya with gizzard, kidney, onions and tomato with one bitter lemon” This is the type of conversation you hear between a customer trying to place an order and a Suya Spot owner in Nigeria. If you have ever tried Suya, you will know that it is one of the best things that ever happened to grilled beef or lamb or goat or chicken. I would suggest Suya for those going on a strict protein diet. The spice gets you drinking lots of water and before you know it, you are full. What also makes Suya so unique, is the spice used to make it. I have never known the name but all I know is its called “Suya Pepper.” You could also use this spice for other dishes for a little more flavour. I sometimes use it in my Asun or Jollof Rice. It adds a distinct flavour to it. The recipe is available below.
Ingredients
  • 2.5 teaspoons finely grounded roasted peanuts
  • 1 teaspoon dry pepper or cayenne pepper or chilli pepper flakes (ground)
  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon of salt
  • 1 cube of Maggi
Method
Grind Roasted peanuts to a fine powder
Add grounded pepper(dry pepper), paprika, ground ginger, garlic and onion powder and salt to the bowl of grounded peanuts.
Mix ingredients together and you have your Suya spice.

Jid-Vocals is a Nigerian gospel artiste, based in Ukraine. He had already released a single titled 'None Compares' (see video below) earlier this year. He is back with another single titled Kabio'osi (Royalty), a song written in English and Yoruba. He features a Zimbabwean gospel artiste, Mqhele, on this track as well.

Kabio'osi (alternatively called Kabiyesi) is a Yoruba term/name used to address kings. It means 'Unquestionable.' This song is an expression of Jid-Vocals (and Mqhele's) 'take' on the fact that Jesus, the King of Kings, is unquestionable.

Criminals still on Nigerias HONOURS list

See The Ex-Convicts Who Are Still On Nigeria's National Honours List




It is such a shame that the names of a former National Deputy Chairman of the Peoples Democratic Party, Chief Bode George, and other ex-convicts, are still on the national honours list.

Other prominent convicts whose names are on the list are former Inspector-General of Police, Tafa Balogun; ex-Managing Director of Oceanic Bank, Cecilia Ibru; her former counterpart in the defunct Intercontinental Bank, Erastus Akingbola (still in court); and other ex-managing directors of banks convicted after they were conferred with the national honours.

President Goodluck Jonathan during the 2012 national honours awards in Abuja in September had said that he had directed the national honours award committee to withdraw the awards from awardees who had been convicted or undergoing criminal trial.


Unfortunately, it appears what the President said then was a 'mere' talk without any action to back it.

Yes, you heard right. N3.5 billion in just one month. Facebook's stock shot up from $21.08 a share on the first day of trading in November to $28 a share at the end of the day Friday, its highest price since July. Zuckerberg, who owns about 504 million shares of Facebook stock, gained about $3.48 billion as a result...



When Facebook first went public at $38 a share in May, Zuckerberg’s shares were worth $19.1 billion. In the following months, the stock dropped to less than half that IPO price to $17.55 in late August, pushing Zuckerberg’s net worth down to $8.84 billion.

Since then, Facebook’s stock has recovered in fits and starts and so has Zuckerberg’s wealth. November proved to be by far the most robust growth month for the stock to date, thanks to two big factors. First, the company had a strong earnings report in late October, which showed that Facebook was making progress in monetizing mobile. Secondly, the second and largest lockup period for stocks held by employees finally expired in the middle of November, which was something investors had been dreading for months and arguably held down the stock price.

As of last Friday, Zuckerberg’s net worth was $14.1 billion and will likely only continue to grow in December.

The parents of late Miss Imienfan Omokaro, a four year-old who recently drowned at the Kingdom Heritage Model School, an arm of Winners Chapel in Benin, Edo State are demanding N2 billion as general damages from General Overseer of the church, David Oyedepo, within 14 days.
In a letter dated November 28, 2012 by her father, Jolly Omokaro’s counsel, the amount demanded was “for the callous and senseless killing of our client’s daughter, Miss Imienfan Omokaro.”
According to Daily Independent, Imienfan, a Kindergarten pupil of the school was reported drowned in a drum of water in a toilet in the school on November 1, 2012. Her parents were not informed of the incident until late in the day when her mother wanted to pick her from school.
The school authority and Winners Chapel had reportedly prayed for the little girl before taking her to Irowa Hospital in Benin, where medical personnel confirmed she was dead before she was brought in. According to a source who pleaded anonymity, the school authorities had kept the girl for over an hour praying for her, before finally taking her to the hospital.
Mr. Omokaro’s lawyers want Kingdom Heritage Model School to tender unreserved apology in three national newspapers, warning that if the demands were not met within 14 days, “we have the irrevocable instructions of our client to commence legal action against the school (Kingdom Heritage Model School) and Church (Winners Chapel) without any further correspondence from this Chambers.”
The events surrounding her death raises many questions which makes the anger of her parents easily understood. How did the little girl get into a drum of water and drown in it? Why should a four-year be allowed to go to the toilet unsupervised without an adult around? Why wasn’t she taken to the hospital immediately? Why were her parents not informed immediately of what had happened to their child?
Her death is indeed very sad and we pray that her gentle soul will Rest In Peace. It also serves as a wake-up call to school administrators and child handlers to be extra vigilant with the young children put in their care

The quad of Patricia King, Olugbenga Oyebola, Odunayo Ojo and Michael Abdul forms the gospel music group called Midnight Crew with their popular gospel hit track “Igwe”. The group’s spokesman, Abdul, in this interaction, tells KEHINDE OYETIMI, their story as well as challenges. Excerpts:

What is the story behind the coming together of the four of you?
WE were all students of the Yaba College of Technology in Lagos. While we there, we had this choir called the Original Love Choir. It was a non-denominational choir. Somehow we found ourselves in that choir. I will like to say that destiny found us. In choir everywhere, there would be top shots. We were the top guys at the choir then. Eventually at the end of our programmes in school, we felt that the 11 of us that were always together could start something else so that all the fun that we had while serving God at school would not just end. That was how we started Midnight Crew on November 8, 2001. We started as 11 people.
How then did your group reduce to four?
I think it was the wind of time. Some of us took different decisions. Some said “Oh I am getting married. My husband is in Canada. I have to go join him.” Some decided that “Oh I have just finished from the polytechnic system. I think I want to step up. I want to do my master’s programme. I think I can’t mix music with study.” Other reasons followed until the number was reduced to four.
The name of your group fascinates me. The word “midnight” naturally evokes fear. Now when that expression is made to qualify the word “crew”, it sounds sinister.
(Laughs…) It sounds sinister. We know that everything God created is good. It is for a purpose. Nonetheless, we started “Midnight Crew” based on Judges Chapter 6 which was divinely given to us. Remember I said that we started as 11 people. In Judges Chapter 6, Gideon had a mission to tear down the altars of Baal. The Bible records that he couldn’t do the job alone. He therefore decided to gather ten other men to help and they became 11. The Bible then records that because Gideon was afraid that he and his men went at midnight to perform the task.
For us, we refused to see the fact that it was because Gideon was afraid that was why he led his men at midnight but rather it was in the morning that he got victory. Weeping may endure through the night but joy comes in the morning. So we decided to take on that act of theirs which involved going at midnight and decided that their name must be midnight crew. Our mission statement is to tear down the altars of religion and put the praise of God on the lips of all men. Somehow our vision sounds alike. We decided to then go with the name Midnight Crew going by what Gideon and his men did.
How do you arrive at a collective inspiration as gospel artistes?
We get inspired ultimately from God and from the calling. Our vision also guides us during inspiration. We also get inspired from daily experiences. The basis of our establishment is to put the praise of God on the lips of all men. Any other thing is secondary.
Your hit track for a large number of people is “Igwe”. Outside that, many people are finding it difficult to identify with other tracks of yours. What led to that track and how do you intend to replicate a similar music followership that “Igwe” enjoys in your other music tracks?
After we started Midnight Crew, we were majorly Yoruba people. We found ourselves using a lot of Yoruba songs and we had just a few Igbo influences within the group. So sometimes we did Igbo songs. After ministrations in some churches, we are chided for singing too many Yoruba songs in an Igbo-concentrated church and the other way round in Yoruba-concentrated churches. That became a burden for us. God orchestrated our movement. We got the song “Igwe” which represents the major ethnic groups and that changed everything.
What we have decided is basic. Our decision is that we will follow through with our vision. If that vision changes and we get distracted by “Igwe”, we may just lose it. You would just find yourself chasing after “Igwe” when you are actually expected to be chasing after the people. Initially there was that pressure of catching up with “Igwe”, but we decided that “come, not every child will be the same. If you give birth to a child that becomes a president, know that not all your children will become presidents.” The best thing for us is to put in the best in our music and follow through with the vision. That is basically what we have done. After “Igwe”, we have released another album which we are about starting to get promotions on. That is the way we are taking it.
Don’t you foresee a breakup in your group in the near or distant future?
I think what we fear most is what comes at us. When you put your attention on what you fear, it comes strongly at you. You may find yourself resisting until it breaks it. We have decided that breaking up is not our focus. The vision is our focus. What I have discovered by research is that what every artiste needs is a platform. A group is an artiste but the individuals that make up that group are artistes. The group must give each person a platform of expression. If that is missing there will be reactions. I believe that if everybody is well catered for within the group, everything will fall in place. There shouldn’t necessarily be strife.
The fact that a group starts and ends is not a bad thing. In Midnight Crew, we have decided that it is not an issue. Every vision is for a time. Not every vision will last forever. As a matter of fact, we also have single artiste that does not last.
The Midnight Crew is made up of two ladies and two gentlemen. You guys look so wonderful that one would have concluded that marrying each other would have cemented the bond of the crew.
(Laughs…) We are all married but to separate people. We are not married to each other in the group. That decision was taken when we left school. We were young then and it was natural to say that we should date one another. We made that rule that we were not going to date each other in the group. Apparently, there were other groups which did well but the problem they had was that they were dating one another. Eventually the group did not last.
Did that decision help to stabilise your relationship?
It has helped. Imagine your girlfriend and you being in the group and I talk to her anyhow, you will not like it…

That decision has helped us.
What has formed the most difficult challenge for you guys in the group?
We had many. We earlier had financial difficulties. Recording our songs was also a challenge. Initially, we did not charge a fee but to get sustained it became necessary. We also had the challenge of after “Igwe” what next. A lot of people kept calling and it was difficult to get things straight. We had to ignore the pressures and get our pressures that we could handle.
How far has “Igwe” taken you?
It has done very well. As a matter of fact, the song became popular in January, 2008. We are approaching January 2013 and we still have that great attention. We are still booked till next year. It is fantastic.

A recent ranking of African Universities by Africa.com has placed the University of Lagos in the 9th position. Cairo University, Egypt ranks first on the list followed by yet another University in Egypt, American University in Cairo.
According to a statement on their website, “While students from across the continent continue to move abroad to study at leading learning institutions in the U.S. and Europe, Africa boasts its own league of great universities. Presented below is Part I of Africa.com’s Top 10 Universities in Africa. Part II will feature the Top 10 Universities in South Africa, a country that is home to enough academic heavyweights to populate its own list.”
Here is the list of 10 Universities ranked top in Africa:
1. Cairo University – Egypt
2. American University in Cairo – Egypt
3. Mansoura University – Egypt
4. Makerere University – Uganda
5. University of Nairobi – Kenya
6. University of Dar es Salaam – Tanzania

The Statement on University of Lagos
Established in 1962 with the aim of training professionals for the newly independent Nigeria, the University of Lagos is a comprehensive university that strives to learn through “knowledge and research.” The University houses nine faculties, and the Medical School is home to three faculties.
